The preparation we made is so simple. All the grilled items we marinated with masalas and spices the previous day itself. so that the recipes are tasty soft and succulent. the paneer, chicken recipes everything was marinated. only thing we bought fresh was the sea foods the fish and the prawns and the mutton for briyani. So before start cooking all the grill we must take the marinated stuffs out of the fridge atleast 1/2 hour to 1 hour before. All the grill items first we cooked some time in the grill pan with butter and then grilled on a wired grill pan or on the stove top itself to get the smoky effect. The day we were cooking there was no current for grilling in the oven. only the tandoori chicken had time to grill on the oven. everything went well by the day.
