Tender coconut payasam / kheer

Tender coconut payasam/ Kheer a cold dessert to enjoy the summer. Kids jus love to have it. As this Kheer is prepared with milk, coconut milk, tender coconut water, tender coconut pulp. Chose a tender coconut with tender pulp in it and also use a fresh one. We have also added freshly home made coconut milk. And condensed milk to give a thickness and flavor. Further more it is topped up with dry fruits like cashews, almonds and raisins. You can also add chironji seeds or Sara paruppu in Tamil. It gives a nice crunchy taste when you roast all the dry fruits in ghee.

Coconut Milk, Water, Flesh, and Oil

Fresh coconuts can be either young or mature. Young coconuts either have a green shell or a white husk (where the green shell has been removed).  These are typically Asian coconuts. There is also the more familiar brown-haired variety which is the more mature coconut. Young coconuts contain more water and soft, gel-like meat whereas mature coconuts have firm meat and less water.

Young coconuts are the most health enhancing of the two. The water in the young coconut is one of the highest sources of electrolytes. Electrolytes are responsible for keeping the body properly hydrated so the muscles and nerves can function appropriately. Therefore it is more beneficial to drink the water from a young coconut after an intense workout rather than the commercial sports drinks we see advertised.

Coconut water is also low in calories, carbohydrates, and sugars, and almost completely fat-free. In addition, it is high in ascorbic acid, B vitamins, and proteins. Furthermore, the soft meat, or flesh, inside the coconut helps to restore oxidative tissue damage and contains a source of healthy fats, proteins, and various vitamins and minerals.

Ingredients
  

  • 3 Tender coconut Take water and pulp seperately
  • 1 1/2 Full Coconut / தேங்காய் To extract milk
  • 500 Ml Milk
  • 200 Gms Condensed milk
  • 4 Tbsp Sugar / சர்க்கரை
  • 1/2 Tsp Cardamon Powder
  • Cashews
  • Almonds
  • Raisins
  • 2 Tbsp Ghee / நெய்

Instructions
 

  • In a heavy bottomed vessel add 500 ml milk
  • Add 4 tbsp sugar
  • Stir well till sugar dissolves and the milk becomes thick.
  • I have added Nestle condensed milk
  • Add 200 gms of condensed milk
  • Stir till binds well and switch off. Cool down completely.
  • As we are going to add coconut milk the milk should be in room temperature.
  • Add 1 and 1/2 coconut cut into small pieces in a mixie jar. Add little water and grind.
  • Extract milk. As we need thicker milk do not add much water.
  • I got almost 300 ml of thick coconut milk.
  • Now add tender coconut water from the 3 coconut to the cooled milk.
  • Add tender coconut pulp mashed well or cut into pieces.
  • Strain coconut milk again second time before adding it to the vessel.
  • See we got more tiny coconut pieces. Discard them. Because it spoils the Kheer giving different texture.
  • Add 1/2 tsp cardamon powder.
  • I roasted cashews, almonds and raisins in 2 tbsp ghee and add to the Kheer.
  • Mix well and keep in fridge for 1-2 hours. It tastes even more good when you give a rest time.
  • After 2 hours mix well and serve chill.
  • Tender coconut payasam is ready to serve. Enjoy the summer. Kids jus love it !!!
