Sweet corn has amazing benefits and must include in your diet as it has plenty of nutritional value. I made sweet corn vada this morning and everyone of our family enjoyed the tasty and more crispier vada. Try it out and comment me. You can also use field corn it tastes much better than sweet corn for preparing vada. But include vada once in a while for those are in diet.
Sweet corn is a starchy vegetable that doubles as a functional food. Starchy means it is high in carbohydrate content. Functional means it contains multiple nutrients that can bring benefits to the body. When it comes to the diet, sweet corn works well as a side dish, or an ingredient in soups, salads or casseroles.
Remove all corn kernels from the corn cob. Soak channa dal over night.
Extract excess water from channa dal and keep aside.
Chop 2 onions finely, chop coriander leaves .Keep all ingredients ready.
In a blender add corn, channa dal, red chilly, fennel seeds, garlic pods and salt to a coarse mixture. Divide and blend it, do not add water as the corn kernels have wet inside it leaves some water.
After you grind vada mixture add chopped onion, curry leaves and coriander leaves to it. Mix well and allow to rest for half an hour.
Now keep a kadai add oil to it once the oil is ready for deep fry, make balls out of the vada mixture by hands flatten it slightly and add to the oil and fry it till golden brown. Do it in batches as the size of the kadai.
Sweet corn masala vada is ready to serve with chutney. Crispy and spicy !!!
