Spicy brinjal fry for variety rice | Kathirikai fry

Brinjal fry side dish for any variety rice it goes well with curd rice or sambhar rice. This spicy brinjal fry tastes good you can use any variety of brinjal for making this fry. But make sure that you cut brinjal pieces thin and lengthwise, if you cut big pieces it takes longer to cook. Its a quick side dish to prepare in less than 15 minutes. Some people would also add ginger garlic paste to this fry it tastes very good and the aroma will be excellent.

Spicy brinjal fry for variety rice | Kathirikai fry
  1. In a pan add 2 tsp oil
  2. Add 1 tsp mustard seeds and 1 tsp cumin seeds.
  3. Add few curry leaves
  4. Add 5-6 brinjal cut lengthwise
  5. Add 1 tsp salt or as required
  6. Add 1/3 tsp turmeric powder
  7. Add 1/3 tsp omam
  8. Add 1/3 tsp cumin powder
  9. Add 3/4 tbsp chilly powder
  10. Mix well and fry till brinjal is cooked
  11. Do not mushy the veg stir gently
  12. Add chopped coriander leaves
  13. Give a quick stir brinjal fry is ready to serve
