Ingredients
  

  • 3 Glass Basmati Rice / பாசுமதி அரிசி
  • Carrots
  • Beans
  • Potatoes / உருளைக்கிழங்கு
  • Baby corn
  • Green peas
  • Meal maker
  • 3 Tbsp Ginger and garlic paste
  • 2 Green Chilly / பச்சை மிளகாய்
  • 2 Tbsp Chilly Powder / மிளகாய் தூள்
  • 2 Tbsp Curd / தயிர்
  • Salt
  • Oil
  • Bay Leaves / பிரியாணி இலைகள்
  • Cinnamon
  • Cloves
  • Star anise
  • Marathi moggu
  • 2 chopped onion
  • 4-5 Tomatoes / தக்காளி

Method
 

  1. Soak basmati rice 3 glass
  2. Chop 2 onion, chop baby corns, cut baby potatoes and clean green peas
  3. Chop carrots beans and 4-5 tomatoes
  4. Prepare paste from 1 inch ginger,5-6 garlic cloves and 2 green chilly
  5. Boil meal maker till tender. Wash in cool water again and squeeze extra water
  6. Take bay leaves, cinnamon,star anise,cloves, Marathi moggu and cardamon
  7. In a heavy bottomed vessel add oil
  8. Add chopped onion and saute well add salt now
  9. Add all spices except cardamon
  10. Add chopped carrots and saute.
  11. Add chopped beans and saute
  12. Add cut baby potatoes
  13. Add baby corns
  14. Add ginger garlic and chilly paste
  15. Add tomatoes
  16. Add handful mint and coriander leaves
  17. Add 2 tbsp chilly powder
  18. Add meal maker now
  19. Add 2 tbsp curd
  20. Add soaked basmati rice
  21. Mix well gently
  22. Add 6 glass water 2 glass for each
  23. Check for salt and spiciness
  24. Add cardamon now. Otherwise the flavor goes off
  25. Add saffron milk
  26. Allow to boil well and transfer to a vessel and pressure cook for 2-3 whistles.
  27. Hot veg biriyani is ready
