For making mutton kuzhambu masala
- In a pan or kadai add 2 tsp oil add all the ingrdients given under for making masala one by one and fry in oil till nice aroma comes.
- Adding shallots to this curry gives nice taste. Adding coriander seeds gives nic aroma and thickness to the curry. Add grated coconuts at the last and give a quick mix and switch off.
- Once the mixture is cooled down grind to a fine paste.
- if you don't have ginger garlic paste handy add 4-5 garlic cloves and 1/2 inch ginger along with the masala.
For making mutton pepper curry in karaikudi style
- In a pressure cooker add 3 tsp sesame oil. sesame oil gives nice taste to non veg dishes.
- Add 2 green chilly and 1 tsp ginger garlic paste and mix well. Add the ground masala paste and stir.
- Meanwhile prepare paste of 2 medium sized tomato and add it to the cooker
- Add fresh curry leaves and add cleaned mutton and mix well.
- Add required salt and water to the curry. Add 1 tsp full of garam masala powder and mix well.
- add 1 tsp ghee and mix well check for salt and spiceness. Add more pepper powder if needed.
- Cover the pressure cooker and cook for 4-5 whistles.
- Open and check whether mutton is cooked. Garnish with coriander leaves and serve hot with idly, dosa, chapathi or rice.
