Karaikudi potato fry

Ingredients
  

  • 5 Potatoes / உருளைக்கிழங்கு Cooked and cut
  • 1 Onion / வெங்காயம்
  • Few Curry Leaves / கறிவேப்பிலை
  • Few Coriander Leaves / கொத்துமல்லி தழை
  • 1 Tbsp Urad dal
  • 1 Tsp Pepper corns / மிளகு
  • 4 Red chilly / சிவப்பு மிளகாய்
  • 1 Tsp Cumin seeds / சீரகம்
  • 1 Tsp Fennel
  • 1/2 Tsp Turmeric Powder / மஞ்சள் தூள்
  • 1 Tsp Salt

Method
 

  1. Preheat a pan to make dry masala powder for this recipe
  2. Add 1 tbsp urad dal
  3. Add 1 tsp pepper corns
  4. Add 4-5 red chilly according to your spice level
  5. Add 1 tsp cumin seeds
  6. Add 1 tsp fennel seeds. Dry roast well. Cool down completely and grind to fine powder and keep aside.
  7. In the same pan add 2 tsp oil
  8. Add chopped onion and curry leaves saute well till transparent.
  9. Add 1 tsp salt and cook
  10. Add cooked and cut potatoes
  11. Add 1/2 tsp turmeric powder
  12. Add ground masala powder for this recipe. Adjust the masala powder according to your spice level.
  13. Fry well in low flame. Till it becomes crispy.
  14. Garnish with fresh coriander leaves and serve.
  15. Karaikudi style potato fry is ready to serve.
