Preheat a pan
Add 1 tsp oil
Add 1 tsp mustard seeds, 1 tsp cumin seeds
Add 2 green chilly
Add few curry leaves
Add 1 chopped onion and saute till transparent.
Make sure the onions are cooked well
Add finely chopped beetroot.
Add required salt and stir
Meanwhile grind masala. Add 1 tsp fennel seeds in a mixie jar.
Add coconut pieces
Grind to a coarse mixture
Close lid and cook veg, sprinkle some water if needed to cook veg.
Add 1 tsp cumin seeds powder.
Once the beetroot is cooked well add ground masala mixture.
Give a quick stir. Switch off in 2 mins.
