Vanjaram fish fry my MIL way of doing fish fry really very tasty and spicy. Definitely fish lovers would like it and you must try this recipe to impress your family members. The fish freshness is also matters in the taste. So get a fresh fish for making gravy or fry. Marinating fish will also gives nice taste, at least half an hour of marinating is a must. Most people simply add chilly powder and salt for frying but my mil use onion ginger and garlic juice for making the fish fry masala. Adding corn flour is to just binding the masala. And the important thing adding ajwain gives you nice flavor and aids in digestion. The onion ginger and garlic juice overcomes the non veg smell and give a nice taste. Vanjaram fish fry
Instructions
  1. Clean fish apply turmeric and rock salt keep aside.
  2. Chop 1 onion, chop 1 inch ginger piece, peel 6-7 garlic cloves.
  3. Add in a mixie jar and grind to a coarse paste without adding water.
  4. In a plate add 1 TSP corn flour.
  5. Add 1 tsp ajwain or omam
  6. Add 1 tbsp chilly powder.
  7. Add 1 TSP salt. Mix everything well.
  8. Now rinse the fish again in clean water. Add the mixed powder on the cleaned fish.
  9. Extract juice from onion garlic and ginger paste to the fish.
  10. Apply masala well for each fish and keep seperately in a plate.
  11. Repeat for other fish and rest for half an hour.
  12. You can also keep it inside refrigerator.
  13. Before frying it keep it for 15 mins at room temperature.
  14. In a non-stick pan add oil and fry fishes in batches.
  15. Turn sides and fry fish apply oil if needed.
  16. Do not burn them fry in low to medium flame.
  17. Transfer to a plate.
  18. Repeat other fish in frying.
  19. Vanjaram fish fry is ready to serve.
