Vaangi  bath or brinjal rice or eggplant rice. Vaangi bath | brinjal rice for kids | easy lunch box ideas. Vaangi Bath is a South Indian dish that originated in Karnataka, popular among the Brahmin community with brinjal as the main ingredient. Its simply brinjal fried rice. Vaangi bath powder is prepared for adding in this rice. It very simple you can prepare this vaangi bath powder and store.

 

To prepare vaangi bath powder
1 Tsp Channa Dal
1 Tsp Urad dal
1/2 Inch small cinnamon stick
2 Tbsp Grated coconuts
3 Red chilly / சிவப்பு மிளகாய்

One of the rice varieties and its a good recipe for kids lunch box or office lunch box. It tastes good even at afternoon. Its simply a brinjal fried rice but we do not add pepper you can also replace chilly with pepper.

Instructions
To prepare vaangi bath powder
  1. Dry roast 1 tsp channa dal
  2. Dry roast 1 tsp urad dal
  3. Add 1/2 inch cinnamon stick
  4. Add 2 tbsp grated coconuts
  5. Add 3 red chilly and dry roast along with
  6. Switch off and cool completely
  7. Add in a mixie jar and grind coarsely. Vaangi bath / brinjal rice powder is ready. You can prepare this powder and store but omit coconut while preparing to store.
To prepare vaangi bath
  1. Cook basmati rice or normal rice 2 cups and cool completely.
  2. Cut 5-6 brinjal to small pieces and keep aside.
  3. Soak small gooseberry sized tamarind in hot water. We need a thick pulp so do not add much water.
  4. In a heavy bottomed vessel add 2 tsp oil.
  5. Add 1 tsp mustard seeds and 1 tsp cumin seeds
  6. Add few curry leaves
  7. Add 1 finely chopped onion
  8. Add 2 tsp salt
  9. Add 1/2 tsp turmeric powder
  10. Add cut brinjal and saute in oil till its half cooked
  11. Now add ground vaangi bath powder and saute the brinjal is fully cooked.
  12. Mix well till the powder binds well. Add extracted thick tamarind pulp.
  13. Add cooked rice to the brinjal
  14. Mix gently take care that you do not break the rice.
  15. Brinjal rice is ready to serve. It tastes good and the best rice for lunch box for school and Office.
