Thattai or thattu vadai my favorite snack and we prepare it during the occassion of Krishna Jayanthi or Diwali. This tasty and crispy thattai is prepared with rice flour, urad dal flour and roasted gram dal. I have added the flavour of garlic, hing and red chilly. Urad dal flour and roasted gram dal gives you nice taste to the thattai do not skip the both ingredients. Instead of adding Channa dal you can also replace with peanuts or groundnuts. You can add chilly powder instead of red chilly. But I like the chilly flakes on the thattai once fried. I used home made rice flour/ pacharisi maavu. My MIL often prepare it in the weekends of soaking and drying it and we just give in mill to grind to smooth powder.

Instructions
  1. Soak 2 tbsp Channa dal for half an hour
  2. Add 1 tbsp urad dal to a pan and dry roast
  3. Roast till golden brown and cool
  4. Add urad dal to mixie jar and grind finely
  5. Add 2 tbsp roasted gram dal and grind again
  6. Grind finely to smooth powder
  7. Sieve it well
  8. Add 1 cup rice flour and sieve along with it and keep aside.
  9. In a pan add 2 garlic cloves
  10. Add 3 big red chilly and dry roast
  11. Cool down and add to mixie and grind coarsely
  12. Chilly flakes is ready keep aside
  13. Add the sieved flour to a bowl. Add 1 tsp butter
  14. Sprinkle some hing on it
  15. Add ground chilly flakes
  16. Add soaked Channa dal
  17. Add 1 tsp salt or as required
  18. Mix well by hands add water little by little and knead dough like chapati
  19. Do not add much water
  20. Thattai dough is ready keep aside for half an hour
  21. Grease a plantain leaf with oil . Take a small dough and keep on it.
  22. Take another plantain leaf greased with oil place upside down on the dough
  23. Keep a flat cup on top and press gently
  24. Now thattai got its shape. Just hole on the top with a fork so that it's not puffed up and crispier inside when cooked.
  25. Remove from the leaf like this
  26. Shape it again if needed
  27. Preheat oil and then keep in medium flame
  28. Drop the shaped thattai in oil
  29. Turn sides and fry
  30. Once it is cooked and crispy enough take away and repeat the same for cooking other thattais
  31. Crispy and tasty thattais are ready.
Recipe Notes

Important instructions to follow

  1. Measure the quantity of flours. And sieve them properly before using.
  2. Roast urad dal till golden brown it gives nice aroma and tastes good
  3. Can replace Channa dal with roasted peanuts or groundnuts
  4. Can replace red chilly with chilly powder
  5. Garlic is optional if you like the flavour of garlic go ahead
  6. Garlic and hing is added because we include Channa dal as it causes bloating
  7. Do knead dough very hard
  8. Do not add more water add little by little at a time
  9. Grease the plantain leaf with oil so that it is easy to take away from the leaf
  10. Preheat oil well and while cooking reduce to medium to low flame
  11. Just prik the top of thattai with a fork in the middle before dropping in oil
  12. It avoids puffing up and air blocks if any.
