Stuffed pavakkai or stuffed bitter gourds or stuffed karela recipe one of my favorites recipe for rice. Though some of the nutrients content is lost while cooking it is even healthier to have this vegetable. It states that bitter gourd juice taken regularly cures diabetes problem. And I want you people to know the health benefits of bitter gourd which I listed out below from juicing-for-health website.

There are few other fruit or vegetables that can offer the medicinal properties for the following ailments quite like bitter melon does.

Bitter gourd treats blood disorders:  Bitter gourd juice is highly beneficial for treating blood disorders like blood boils and itching due to toxemia. Mix 2 ounces of fresh bitter gourd juice with some lime juice. Sip it slowly on an empty stomach daily for four to six months and see improvement in your condition.



Bitter gourd helps kill cancer cells: Bitter gourd juice contains an enzyme that inhibits the transportation of glucose (sugar), thus lowering blood sugar levels, cutting off the food supply to cancer cells, retarding their growth.

Bitter gourd can stop cholera: In early stages of cholera, take two teaspoonfuls juice of bitter gourd leaves, mix with two teaspoonfuls white onion juice and one teaspoonful lime juice. Sip this concoction daily till you get well.

Diabetes Mellitus: Bitter melon contains a hypoglycemic compound (a plant insulin) that is highly beneficial in lowering sugar levels in blood and urine. Bitter melon juice has been shown to significantly improve glucose tolerance without increasing blood insulin levels.

Instructions
  1. I took 4 bitter gourds
  2. Scrape the outer skin gently
  3. Removed skin of all pavakkai
  4. Cut lengthwise leaving up and Lower ends and remove seeds and skin inside.
  5. Take some rock salt and scrub outer skin and also inside of the bitter gourds. This will reduce the bitterness.
  6. Now drop it into the bowl of water. Let it rest till we prepare stuff masala
  7. In a pan add 2 tsp oil
  8. Add 1 tsp cumin seeds and 1 tsp urad dal
  9. Add 2 tbsp grated coconuts
  10. Fry til the wetness of coconuts leaves off
  11. Add peeled peanuts 2 tbsp
  12. Add 10-15 garlic cloves
  13. Add 5 red chilly fry and switch off
  14. Cool down completely
  15. Add 1 tsp salt and grind in a mixie jar
  16. Grind to a coarse mixture and keep aside.
  17. Further strain water from bitter gourds and wash well
  18. Press gently till the bitter gourds are free of water
  19. Now stuff the prepared masala with a spoon inside
  20. Stuff sufficient quantity of the masala inside
  21. Stuff for all the bitter gourds
  22. Fry the bitter gourds in a pan by adding enough oil and cook in low flame. It takes around 15 mins for the bitter gourds to cook.
  23. Once done switch off and keep aside
  24. In a pan add 2 tsp oil add mustard, cumin and urad dal and fry
  25. Add finely chopped 1 onion saute well
  26. Once the onion becomes transparent
  27. Add the remaining stuff masala to the pan and saute
  28. Add 2 tsp Kashmiri red chilly powder
  29. Add 1 tsp salt
  30. Mix everything well do not burn them
  31. Add fried bitter gourds to the pan and mix well
  32. Stir well for 2 mins and switch off.
  33. Stuffed bitter gourds are ready.
  34. Garnish with coriander leaves and serve with hot rice or any variety rice.

Important instructions to follow

  1. Choose medium sized and fresh bitter gourds
  2. Scrape the outer skin is a must
  3. Removing seeds and skin inside is a must as we are going to stuff masala inside
  4. If you prefer you can add removed skin to the stuff masala
  5. Fry bitter gourd in oil finely till it's cooked
