Stuffed lady’s finger learnt from my moms kitchen. This recipe is one if my favorite recipe during my child hood days. Me and my brother loves this fry very much. This stuffed lady’s finger goes well with lemon rice and curd rice the best lunch box side dish. It also goes well with roti. Today I prepared this recipe to share with you people. I got the best comments from my colleagues and am very happy to share this recipe for them. And also my husband’s colleagues gave good comments. Thanks all for your support and motivation.

Stuffed lady's finger | stuffed bhindi / okra recipe
In a pan add 2 tbsp peanuts and dry roast. Make sure you have removed the skin.
Add 3/4 tsp fenugreek seeds
Add 1 tsp mixed channa dal and urad dal
Roast everything well in low flame and switch off the stove.
Cool completely and grind to a coarse mixture in a mixie
Add 1 tsp salt and mix well
Wash and clean small sized lady's finger. Use small and even sized so that it cooks evenly and fast. Remove both ends and cut along the length but do not go deeper.
Now stuff the mixture inside the lady's finger with a spoon.
Repeat for all lady's finger and rest for half an hour.
After resting time mix well by hands and let us start frying.
Add few curry leaved and 1 finely chopped onion.
Add 1/2 tbsp chilly powder and 1 tsp coriander powder
Place the stuffed lady's finger in the pan
Add leftover mixture if any to the pan
Close lid and cook. I placed a plate and pour little water on the plate so that the veg cook soon and do not burn. Cook in low flame till the end.
Add 1 tsp garam masala powder
Remove lid and check in between. Add 1 chopped tomatoes when the veg is half done.
The tomatoes will become mushy.
Once the veg is cooked stir well and switch off. It takes around 15 mins in low flame.
Stuffed lady's finger fry is ready to serve.
Important instructions to follow
Choose lady's finger which is fresh, small and even sized
For stuffing mixture do not add more fenugreek seeds than mentioned otherwise you would taste bitter
Do not burn the veggies or the masala cook in low flame
Add tomatoes only when the veggies are half done
