Easy sidedish to prepare for lunch box or a picnic or when you got bored with vegetables. This masala egg fry goes well with the sambhar rice or any kind of variety rice. My hubby loves this very much and he eats this as it is without rice. I have tried this before many times but all the time I would result in a burnt egg of burnt masala. But the method now which I shared is the exact method to do a egg masala fry. The masala should bind well with the egg and also the masala should not smell raw. - 6-8 Eggs
- 1 tbsp Oil
- 1 tsp Chilly Powder / மிளகாய் தூள்
- 1 tsp Coriander Powder / மல்லித்தூள்
- 1 tsp Salt
- 1/2 tsp Turmeric Powder / மஞ்சள் தூள்
- 1/2 tsp Cumin seeds powder

Instructions
- Boil the eggs in medium flame for 15 minutes. Cool down and remove the egg shells and cut into equal halves.
- In a tawa add 1 tbsp oil. Do not switch on stove now.
- Add 1 tsp chilly powder
- Add 1 tsp coriander powder
- Add 1/2 tsp turmeric powder
- Add 1 tsp salt.
- Add 1/2 tsp cumin seeds powder
- Mix well in oil.
- Spread out the masala evenly in the tawa.
- Check for salt and spiciness if you want adjust here.
- Then place the eggs on the tawa with the yolk part facing the tawa. Apply some masala over the white part of egg like this. Give a resting time of 10 - 15 minutes.
- After 15 minutes switch on the stove and cook in the lowest flame possible.
- Let it fry for minimum of 5 minutes check whether its not burnt. Turn the other side and fry for 2 mins.
- Again turn the eggs upside down and switch of the stove.
- Transfer it to a plate and serve with sambhar rice, lemon rice or tamarind rice of your choice.
- Spicy Egg masala fry is ready to serve.
