Spicy corn Uttapam was really delicious dish. I love it very much. Very colourful tasty and spicy. It doesn’t take much time but just a interest to do that. If you want to eat tasty you must spend some time at kitchen. And the main thing is that it keeps tummy full as it have vegetables like onion, tomato and carrot. You can also include vegetables like grated beets, spring onions and any kind of greens like mint,spinach etc.
Healthy morning breakfast is necessary for a busy day. Yesterday night got an idea to do uttapam, suddenly got remembrance of the broken corn over there in the kitchen so I did preparation for soaking overnight process and came to sleep. In the morning I chopped veggies my hubby told to add grated carrots and my sister in law told to add idly podi as she like spicy foods a lot and thus came the “Spicy corn uttapam”.
Broken yellow corn is easily available in super markets.
Take 2 cups of broken corn check for any impurities and dry roast in a pan.
Once it is roasted well transfer to a vessel add 2 tbsp of thick curd and mix well.
Add 1 TSP salt and mix well again.
Add 1 glass of water and allow it to soak overnight.
Soaking makes the corn soft. We added curd for the sour taste for the batter.
After soaking overnight, check the water has been fully absorbed by the corn. Now blend it in a mixie with little water added to it and 1/2 TSP salt.
Add 2 tbsp of rice flour and mix well. This is for the taste and the Uttapam stiffness. You can also add wheat flour or maida which you prefer. Mix well and keep aside.
Finely Chop onions add it to a bowl, add chopped green chilly to it.
Add chopped curry leaves or coriander leaves I have added curry leaves. Add any one otherwise the Uttapam will be greenish.
Add grated carrots to the onion.
Add finely chopped tomatoes. It's optional.
Add little salt for the taste.
Mix well and keep aside.
Now in a tawa pour the Uttapam batter little thick and a small circle. So that you can easily turn over with the toppings.
Add the mixed veg toppings all over the circle. Slightly press the toppings so that it sticks a little. Apply oil and cook for 2 mins.
Add idly podi 1 TSP full all over the Uttapam. You can skip this if you don't want spiciness more as we already added green chilly. But this gives a fantastic taste to the Uttapam. Cook for 2 mins in medium flame.
Turn over the Uttapam gently and press it slightly. Cook for 2 mins apply little oil.
Now again turn it with toppings facing upward.
And transfer to a plate. No need of any side dish. If you skipped adding idly podi you can serve it with coconut chutney.
