Ramzan special sheer Kurma recipe.
Simply to say it as dry fruits payasam. Dry fruits which I have used is cashews, raisins and dates. You can also add almonds, pistachios etc. But for sheer Kurma we do not roast the dry fruits. We simply soak cashews, almonds and pistachios in warm water for half an hour and then roughly cut into pieces and directly add them to the milk. The reason for soaking is it is easy to chop and easy to chew and also while soaking it gets softer and the complete nutrients is absorbed by our body. The lost nutrients by fasting is regained by having this sheer Kurma and also by many recipes they prepared during the festival.
The method of preparing sheer Kurma is very simple.
Dry roast vermicelli
Add vermicelli to the milk and cook
Meanwhile soak dry fruits, chop them
Once vermicelli is cooked add sugar stir well
Add chopped dry fruits
Add dates chopped
If you need you can add any essence to enrich the flavour
I added roasted sesame seeds to have some crunch
Finally switch off the stove once you add dates
Add cardamon powder to the Kurma to add the extra flavour.
Serve warm or chilled
It tastes heavenly when serve chilled
Refrigerate for one hour and enjoy.
