Poha egg fried rice | aval egg fried rice

Poha egg fried rice with red flattened rice or poha a good recipe for weight loss. Poha egg fried rice also contains vegetables like onion, cabbage and capsicum. You can also add vegetables of your choice like carrots and fresh beans in poha egg fried rice.

My hubby likes fried recipe of my preparation, so he asked me to try it with the poha this time as we have poha upma every night and got bored.

The cabbage and capsicum added to the poha gives the flavor of fried rice. Poha egg fried rice is a good weight loss recipe as it makes you full for longer and do not crave any good at night time. You can also have poha egg fried rice as breakfast. When you have egg at the morning you have more chance of losing weight soon.

Eating poha regularly can prevent iron deficiency or anaemia. It is good for children as well as pregnant woman. Lactating woman also can benefit great from poha. We need sufficient iron to form haemoglobin and it also builds immunity.

You can also top up with squeezed lemon juice on the poha as it helps in improving iron absorption. Lactating women needs that extra iron in her diet apart from pills to recover from the heavy blood loss during the delivery. And also to provide her little one with iron rich breast milk.

Replace your snack time from chips and biscuits to healthy poha. Poha is also good for diabetics as it release sugar slowly into the blood stream.

Instructions
  1. Wash and soak red poha or red aval in clean water. You can cut the vegetables now. The cutting time is enough to soak poha.
  2. Chop all veggies, 1 onion, 1 capsicum,1/4 cabbage and wash cury leaves. You can also add carrot , beans or any veggies of your choice.
  3. Keep the non stick pan or kadai on the stove.
  4. Add 1 tsp oil.
  5. Break two eggs and pour on the pan.
  6. Add 1 tsp pepper powder. And 1/2 tsp salt.
  7. Mix well for 1 min.
  8. Add 1/4 tsp turmeric powder.
  9. Mix everything well do not fry longer.
  10. Transfer to a plate.
  11. In the same pan add 1 tsp oil.
  12. Add 1 chopped onion and saute in high flame.
  13. Add Curry leaves and mix.
  14. Add chopped cabbage and saute in high flame for 2 mins. Keep stirring.
  15. Add chopped capsicum and stir well in high flame for a couple of mins.
  16. The capsicum should have the crunch do not mush.
  17. Add fried eggs now and mix well.
  18. Strain soaked poha or aval without any water and add to the pan.
  19. Add 1 tsp pepper powder and mix gently.
  20. We already added salt in egg so taste and put salt now as required. Fry in high flame for 3-5 mins.
  21. Poha egg fried rice is ready now. Garnish with coriander leaves and serve.
  22. I served with tomato sauce actually you don't need any side dish.
  23. A perfect weight loss recipe.
