Instructions
  1. In a pan add 1 tsp butter.
  2. Add 200 gms paneer cubes saute till light brown color.
  3. Transfer to a plate and keep aside.
  4. In the same pan add 2 tbsp butter.
  5. Add 2 chopped onion and saute till transparent.
  6. Add 4-5 garlic cloves and 1 tbsp ginger.
  7. Add 6-7 cashews and fry till light brown.
  8. Add 1/2 tsp turmeric powder.
  9. Add 1 tbsp chilly powder.
  10. Add 1 tsp coriander powder.
  11. Add 1 tsp garam masala powder.
  12. Add 1 tsp ajwain or omam.
  13. Add 1 tsp cumin powder.
  14. Saute well till the raw smell goes off.
  15. Add 4 chopped tomatoes.
  16. Saute till mushy and cool down completely. Once cools down grind it to a smooth paste. And keep aside.
  17. In the same pan add 1 tsp butter.
  18. Add few curry leaves.
  19. Add ground masala paste.
  20. Add 1 tsp salt or as required.
  21. Add 1 tsp pepper powder and add little oil if needed.
  22. Add 1 tbsp fresh curd or cream.
  23. Mix well till bind.
  24. Add 1/2 glass water.
  25. Boil well for 2-3 mins.
  26. Check spice level and adjust the consistency. Add pepper powder if you need more spicy now. Do not add chilly powder after the gravy has boiled well as it spoils the taste. Try adding pepper powder.
  27. Add fried paneer cubes to the gravy.
  28. Be sure that all the paneer have enough space to cook.
  29. Boil for 2 mins in low flame. The paneer cubes are already cooked so it takes less time.
  30. Garnish with curry leaves.
  31. Hot and spicy South Indian paneer butter masala is ready to serve.
  32. You can serve with chapati or any other pulav varieties. It tastes awesome !!!
