Mutton chops my mother way of doing this recipe. This Sunday it was a family get-together for a temple festival. Later in the afternoon I prepared this mutton chops for rice, it came out very well and everyone enjoyed having it. Mutton chops gravy went well with hot rice you can also have it chapati or roti.

Mostly mutton chops my mom use only freshly ground pepper powder but I added extra flavours of cumin powder, ajwain and used spices like bay leaves, cinnamon stick, star anise and finally cardamon pods for the nice aroma. Actually my hubby doesn’t like mutton if it smells lot so I used to add these flavours to overcome the raw smell of mutton.
Cook mutton properly in pressure cooker for 5 whistles if not cooked properly leave some more whistles. Saute the onion, ginger garlic paste and tomatoes well in oil. Add some more oil if needs for sauteing. Once you saute well then only you get nice color and gravy. And once you add mutton pieces sauté in gravy for 5 mins so that the masala gets deeper inside and tastes good.
All non vegetarians dishes should be spicy so that the raw smell and taste is not much felt. And my hubby from namakkal usually likes only the spicy version of all non vegetarian recipes with all the Indian spices for the flavor. - 1 1/2 Kg mutton
- 3 Tbsp Sesame oil / எள் எண்ணெய்
- 4-5 Big Onion paste
- 6 Big Tomatoes / தக்காளி Finely chopped
- Few Curry Leaves / கறிவேப்பிலை
- 3 Bay Leaves / பிரியாணி இலைகள்
- 3 Star anise
- 3 Small Cinnamon
- 3 Tbsp Ginger garlic paste / இஞ்சி பூண்டு பேஸ்ட்
- 1 Tsp Turmeric Powder / மஞ்சள் தூள்
- 1/2 Tbsp Chilly Powder / மிளகாய் தூள்
- 1 Tsp Turmeric Powder / மஞ்சள் தூள்
- 1 Tsp Cumin Powder / சீரகத் தூள்
- 1 Tsp Ajwain
- 3 Tsp Black pepper powder
- Salt for taste

- Clean and Pressure cook mutton with little salt and turmeric powder and 1 glass water for 5 whistles
- In a heavy bottomed vessel add 3 tbsp sesame oil
- Add 5 big onions paste saute well in oil till oil seperates
- Add few curry leaves and bay leaves
- Add 3 star anise
- Add 3 small cinnamon sticks
- Add 3 tbsp ginger garlic paste. Saute well in oil. Add oil if needed
- Add 6 finely chopped tomatoes
- Add 1 tsp turmeric powder
- Add 1/2 tbsp chilly powder
- Add 1 tsp ajwain
- Add 1 tsp cumin powder
- Mix well. add salt we have already added salt when cooking mutton so adjust accordingly.
- Add freshly ground pepper powder
- Add 2 tbsp pepper powder
- Add cooked mutton pieces saute in gravy for 5 mins
- Add mutton broth
- Allow to boil till the gravy thickens and the gravy gets deeper inside mutton
- Add coriander leaves
- Add curry leaves. Add 4 cardamon pods at the last give a quick stir and serve
- Mutton chops gravy is ready to serve. Serve it with hot rice or chapati
Important instructions to follow
- Cook mutton well don't forget to add little salt and turmeric powder
- Add little water to cook as mutton itself leaves some water
- Saute onion,ginger garlic paste and tomato well in oil till the oil separates
- Add all spices to get the rich taste and smell
- Saute mutton pieces well in gravy so that the gravy gets deeper inside mutton
- Add the cardamon pods at the last so that the flavor doesn't evaporates while cooking
- Add salt a little lesser as the pepper powder raises the salt a little.
