Javarisi Halwa – Has become our family favorite dessert recently.

My daughter one and half years old like the javarisi halwa which has a jelly like texture and easy to swallow, glossy balls. This dessert is prepared rarely so every one like to have this. Usually we prepare payasam and add javarisi as a extra ingredient. But this recipe is full of sago the javarisi. People of all age love to have this. You can feed javarisi to baby from 8 months. Once the sago is cooked well it is easily digested like white rice.

Sago Halwa prepared with sago is not rich in vitamins and minerals so usually people serve it with milk or any dry fruits of their choice. I have prepared this halwa to credit the sago for its glossy balls texture and topped up with dry fruits like cashew and raisins.

Instructions
  1. Soak 200 gms sago in water overnight. Strain water and add it to a pan and saute till it becomes transparent.
  2. Add 1 tbsp ghee and saute well. As we already soaked in water overnight it takes less than 5 mins to turn into glossy balls.
  3. See after 5 mins it became transparent as it got cooked.
  4. Add 1 cup sugar to one cup sago. Add sugar little by little.
  5. After adding sugar it melts down and it soon gets crystalized. So add sugar little by little and stir. Add 1 tsp any food colouring like kesari powder.
  6. I used lemon colour. Mix well till the color blends well.
  7. Once the color blends and the mixture becomes thick check the consistency it should be like gum. Jelly like.
  8. Add 1/2 tsp cardamom powder.
  9. Add a pinch edible camphor / pacha karpooram. It is optional.
  10. Add a pinch salt for taste. This pinch of salt adds extra taste to the halwa.
  11. Add roasted cashews and raisins.
  12. Stir well and switch of the flame. Immediately transfer it to another vessel.
  13. Javarisi halwa is ready.
  14. You can serve hot or chilled.
  15. Javarisi halwa see the glossy balls it is chewy and kids love to have this. The lemon color will be tempted very much.
