Egg masala gravy | Chennai style | spicy egg gravy

Spicy egg masala gravy for rice. I have added Indian spices to enhance the flavour and taste of the gravy. In this egg gravy I made onion and tomato paste and added so it is easy and time consuming. You can prepare this quick in the morning for your lunch. You can have this gravy for rice chapati and also idly or dosa.

As we grind onion and tomato paste you must saute well in oil till the raw smell goes off. Bay leaves, cloves, black stone flower powder, cardamon powder and cinnamon are the spices added. Cumin powder, ajwain and pepper powder gives you nice taste. Adding ghee at the last enhances the flavour.

This gravy will tastes like a restaurant style egg curry and also the richness of color and flavour will feel so. We enjoyed the gravy with chapati for our lunch. And the remaining gravy for dosa in the night. All my colleague friends at office tasted the egg curry and commented it was so good and the taste was very different. Egg masala gravy | Chennai style | spicy egg gravy
Instructions
  1. Take 5-6 tomatoes in a mixie jar
  2. Grind to smooth paste
  3. Take 1 onion chopped, 3 garlic cloves, 1/2 inch ginger chopped in a mixie
  4. Grind to smooth paste
  5. In a pan add 2 tbsp sesame oil
  6. Add 1 tsp mustard seeds, 1 tsp cumin seeds
  7. Once splutters add few curry leaves
  8. Add 3 bay leaves, 1 cinnamon stick, 2 cloves saute
  9. Add 1 finely chopped onion
  10. Add ground onion ginger garlic paste
  11. Saute well till oil seperates
  12. Add tomato paste and saute
  13. Add 1 tbsp chilly powder
  14. If you want more spicy add 1/2 tbsp chilly powder more
  15. Add 1 tsp coriander powder
  16. Add 1 tsp cumin powder
  17. Add 1 tsp ajwain or omam
  18. Add 1 tsp salt or as required
  19. Add 1/2 tsp turmeric powder
  20. Mix all masalas together
  21. Add 1 tsp pepper powder
  22. Add 1/2 glass water and mix well
  23. Add 1/2 tsp cardamon powder
  24. Add 1 tsp black stone flower powder
  25. Add 1 tsp ghee
  26. Add 5 boiled eggs cut lengthwise to absorb gravy
  27. Mix well till egg binds with the gravy
  28. Boil gravy till thickens
  29. Garnish with curry leaves
  30. Serve with hot rice, chapati or dosa
Recipe Notes

Important instructions to follow

  1. Make sure you saute onion paste and tomato paste well in oil
  2. Use sesame oil to get rich taste
  3. Add the spices like bay leaves, cardamon, black stone flower, cloves and cinnamon to enhance the flavour
  4. While adding pepper do not add too much salt as the pepper will make gravy little salty
  5. Add ghee and cardamon powder at the last as the cardamon flavour evaporates if added before
  6. Add all the spice powders in the given quantity for preparing 5 people.
  7. Do not add too much of spices or powders like cumin,black stone powder etc. It spoils the taste
  8. Too much of spices tastes nothing
