Spicy egg masala gravy for rice. I have added Indian spices to enhance the flavour and taste of the gravy. In this egg gravy I made onion and tomato paste and added so it is easy and time consuming. You can prepare this quick in the morning for your lunch. You can have this gravy for rice chapati and also idly or dosa.
As we grind onion and tomato paste you must saute well in oil till the raw smell goes off. Bay leaves, cloves, black stone flower powder, cardamon powder and cinnamon are the spices added. Cumin powder, ajwain and pepper powder gives you nice taste. Adding ghee at the last enhances the flavour.
This gravy will tastes like a restaurant style egg curry and also the richness of color and flavour will feel so. We enjoyed the gravy with chapati for our lunch. And the remaining gravy for dosa in the night. All my colleague friends at office tasted the egg curry and commented it was so good and the taste was very different.
