Egg Kurma | muttai kurma

Paneer like egg cubes Kurma my MIL did this recipe for me to post. My hubby’s favorite egg recipe so I have also learnt this from my MIL. It tastes very spicy and juicy.

Egg Kurma | muttai kurma
  1. Add shallots to a pan and fry it in medium flame till golden brown. Add 1 tbsp fennel seeds to it atleast give a quick stir and switch off stove
  2. Break all eggs and pour to a vessel. Beat well the eggs.
  3. Pour it in a vessel with applied oil and keep inside a cooker with water under.
  4. close lid and cook for around 10 - 15 minutes.
  5. Allow it to rest for 10 minutes.
  6. Once cooked it will be like this. Take a knife and cut into pieces. If you want you can place this container upside down on a plate so that it will easy to cut it like a cake.
  7. Cut into cubes like paneer.
  8. Once the onion is cooled down grind it in a mixie jar to smooth paste.
  9. Keep it aside.
  10. Grind half coconut to a smooth paste, Add 2 tbsp chilly powder,1/2 tsp turmeric powder and 2 tsp salt and mix well in a vessel.
  11. Add 1 tsp coriander powder.
  12. In a pan add oil and add kalpasi powder (black stone flower powder)
  13. Add curry leaves and chopped 2 tomatoes and saute well.
  14. Add onion paste stir well till the oil seperates and add the coconut mixture with the masala to the pan and stir well.
  15. Add 1 and 1/2 glass water and allow it boil till the raw smell goes off. check for salt and spiciness and adjust.
  16. Now add egg cubes to the gravy.
  17. And boil for 5 minutes.
  18. Egg Kurma is ready to serve.
