Easy beetroot halwa | Beetroot Halwa with milk | Diwali recipes

No one likes beetroot sorry sorry I don’t like beetroot the only way my mom feed me and my brother is halwa. Yes tasty, sweety beetroot halwa. I did this with boiled milk and sugar with the flavor of cardamom and toppings with dry fruits it tastes heavenly.
My hubby like this dessert very much and my sister in law just loves it.
This dish is mainly given for lactating moms during the first weeks of pregnancy as the beetroot is excellent veg that boosts breast milk in lactating moms. Milk which is added in this recipe also produces healthy breast milk. Many dry fruits are added to this dessert to make it even more rich. Cashew, almonds, raisins have their own health benefits. The main thing is the raisins which is rich in iron and calcium which is needed by the mom to recover from illness post delivery.

Instructions
  1. Add 1 cup heaped beetroot to a pan
  2. Stir well continuously.
  3. Add 2 tbsp ghee and roast beetroot till the raw smell goes off. Roast for 10 minutes in low flame and stir.
  4. Add 2 glass boiled milk to the beetroot and boil in medium flame.
  5. Mix well it takes almost 10 mins for the milk to absorb completely
  6. Once the milk is absorbed add 1 cup sugar to the beetroot add little by litte.
  7. Mix well till sugar coats evenly.
  8. Sugar melts and makes the mixture diluted mix well till it becomes thicken
  9. Once the mixture becomes thick . Add 1/2 tsp cardamon powder
  10. Add roasted cashews, almonds and raisins.
  11. Give a quick stir and switch off the stove. The halwa will become even more thick when it cools down completely
  12. Beetroot halwa is ready to serve top up with any dry fruits of your choice.
