Chicken Saalna recipe
Instructions
  1. Keep all the ingredients ready, chop tomatoes peel shallots, prepare ginger, garlic, pepper and cumin seeds paste. Grate coconut. Wash curry leaves and coriander leaves.
  2. In a pan add 2 tbsp oil.
  3. Add shallots and fry till golden brown
  4. Add Black stone flower / Kalpasi to the onion and saute.
  5. Add chopped tomatoes and saute till mushy.
  6. Add grated coconut and saute till golden brown
  7. Add 2 tbsp chilly powder.
  8. Add 2 tbsp coriander powder
  9. Mix everything together. check the masala is not burnt.
  10. Cool it and blend it in a mixie jar
  11. Add little water and blend. The masala paste should be like this.
  12. Clean chicken and cook for 3 whistles or keep in a open pan and cook. As I used naatu kozhi / Counrty Chicken it take some time to cook.
  13. In a heavy bottomed vessel add chicken curry leaves and saute.
  14. I have used the chicken broth for soup. Add Ginger garlic pepper and cumin seeds paste to the chicken and saute till raw smell goes off.
  15. Add ground masala paste to the chicken and saute well till the masala binds well with chicken.
  16. Add 2 glass water and allow to boil. As the chicken is already cooked. Cook till the gravy becomes thickened.
  17. Garnish with coriander leaves and serve.
  18. This chicken salna goes well with parotta.

Recipe Notes

Note :

If you dont want coconut you can omit it.

You no need to pressure cook chicken separately before. Prepare gravy and then also you can put in a pressure cooker and cook for 3 whistles this will give a different taste.
