Chicken liver gravy my mother in law prepared this dish for Sundays breakfast and we had it with hot and fluffy idly. The chicken liver gravy was super spicy and extremely tasty one. Everyone enjoyed it very much. Non veg items should be that spicy and flavorful so that we do not get the smell of it. My MIL will add lots of ginger and garlic paste to over come the non veg smell. Moreover she will grind onion and other things we add to the gravy to a smooth paste and saute in oil well. It gives a nice taste and aroma when we add the ground materials. And also the gravy will be thick enough to eat with idly or dosa. The chicken liver gravy will also goes good with hot rice.

- 250 Gms Chicken liver
- 2 Onions / வெங்காயம் For making paste
- 2 Tomatoes / தக்காளி Finely chopped
- 3-4 Tbsp Sesame oil / எள் எண்ணெய்
- 2 Tbsp Fennel seeds / பெருஞ்சீரகம் Roast and grind
- 2 Tbsp Khus khus Roast and grind
- 2 Tbsp Ginger garlic paste / இஞ்சி பூண்டு பேஸ்ட்
- 1 Tsp Kalpasi powder Black stone flower powder
- 5-6 Small Bay Leaves / பிரியாணி இலைகள்
- 3-4 Cloves
- 1 Stick Cinnamon
- 1 Tsp Turmeric Powder / மஞ்சள் தூள்
- 3 Tsp Coriander Powder / மல்லித்தூள்
- 1 1/2 Tbsp Chilly Powder / மிளகாய் தூள்
- 1 Tsp Pepper Powder
- 1 Tsp Salt Or as required

- In a pan add 2 tbsp sesame oil
- Add 2 onion paste and saute well
- Add 1 tsp kalpasi powder/black stone flower
- Add 2 tbsp ginger garlic paste
- Add 5-6 small bay leaves, 3-4 cloves and small stick of cinnamon
- Add paste of 1 tbsp fennel and 1 tbsp khus khus grinded together. Roast before grinding add some onion if it didn't grind properly.
- Add 250 gms of chicken liver cleaned and drained from water
- Add 1 tsp turmeric powder
- Add 3 tsp coriander powder
- Add 1 and 1/2 tbsp chilly powder
- Add 1 tsp pepper powder
- Add 1 tsp rock salt
- Add 1 glass water
- Add 2 finely chopped tomatoes. Boil till gravy becomes thick.
- Check for salt and spiciness
- Liver gravy is ready
- Serve with idly dosa or hot rice

Important instructions to follow
- Wash chicken liver in water with turmeric powder so that it doesn't smell lot
- Saute all the ground paste well in oil
- Add water once the oil oozes out from the gravy
- Use sesame oil to get that authentic taste and flavor
- Roast fennel seeds and khus khus before making paste to get nice aroma. If it didn't grind properly add some onion for making paste
