Easy chicken biriyani

Usually I prepare biriyani by dum method only because am afraid of doing in pressure cooker. In pressure cooker mostly the rice underneath will get burnt or the rice will become mushy most times or the rice will not cook properly so I prepare gravy separately and cook rice and put dum. But once I practised pressure cooker method it became easy now. While preparing dum biriyani I ask help from my husband now he is happy as myself prepare in cooker. Now he jus enjoy eating it and commenting.

Practice makes man perfect. Once you start doing regularly you may get through it. Try it out and comment me.

Easy chicken biriyani
  1. Clean and wash 3/4 kg chicken.
  2. Add 1 tsp ginger garlic paste
  3. Add 1 tbsp chilly powder
  4. Add 1 tsp coriander powder
  5. Add 3/4 tsp cumin powder
  6. Add 1/2 tsp Ajwain / Omam
  7. Add 1 tsp Pepper Powder
  8. Add 1 tsp salt
  9. Add 1 tbsp fresh curd
  10. Add 1/2 lemon juice
  11. Mix everything well
  12. Rest the marinated chicken for 1/2 an hour
  13. Check for salt and spiciness
  14. Meanwhile wash and soak 3 glass basamati rice
  15. After half an hour in a heavy bottomed vessel add 3 tbsp oil
  16. Add 4 onion chopped lengthwise
  17. Add 4-5 bay leaves, 2 cinnamon sticks, 3-4 cloves
  18. Add 4 tbsp ginger garlic paste
  19. Saute well till raw smell goes off
  20. Add the marinated chicken
  21. Saute well in oil till the chicken is half cooked
  22. Add 1 tsp cardamon powder
  23. Add 4-5 tomatoes and saute well
  24. Add handful of mint leaves
  25. Add 1 and 1/2 tbsp chilly powder
  26. Add 1 tsp coriander powder
  27. Add 1 tsp curd
  28. Mix everything well
  29. Add soaked basmati rice
  30. For 1 glass rice add 1 and 1/2 glass water
  31. I added 3 glass rice 4 and 1/2 glass water since we have gravy I have reduced 1/2 glass water
  32. Boil well check salt and spiciness. The gravy water should be little salty and spicy so that the rice tastes good
  33. Close cooker and cook in low flame for 20 minutes.
  34. Hot and spicy chicken biriyani is ready to serve.
  35. I served with egg, raita and chicken gravy

Important instructions to follow

  1. Soak basmati rice for lengthy grains
  2. Marinate chicken to get good taste
  3. Keep note on how much water you add
  4. Timing is important for a perfect biriyani so cook in low flame for 20 mins
