Heat a pan and dry roast cardamom and crush it to powder.
I used mortar to crush it.
Add roasted cardamon with little sugar, so that it will be easy to make it powder
Cardamon powder should be like this. Transfer it to a plate.
In the same pan add ghee
Add Cashews and roast it till light brown color
Add raisins and fry till it becomes round in shape and fluffy
Transfer it to a plate.
Now in the same pan add shredded carrot
Fry till the raw smell goes off. You can identify it by the color change or the sweet smell of the carrot. Simply it takes less than 10 minutes.
Identify the color change. If you want to add milk you can add at this stage and boil till milk absorbs completely.
Add sugar in the ratio 3:1 (carrot:sugar). I have added 1 cup heaped shredded carrot so I take ¼-½ cup sugar in the same cup.If you add milk the ratio is 3:2:1 (carrot:milk:sugar).
Stir continuously add ghee if need, the sugar will melt and dilute the mixture. Don’t worry it will get thicken in 3- 5 mins. Cover and cook for few minutes.
