Tips For Usage:

  1. Before cooking, thoroughly wash and rinse the whole okra well with water.
  1. After washing, pat it dry completely, using a dry towel.
  1. You can then store it in a zip-lock bag and leave it overnight in the fridge before using it the next day. This will make it less slimy while cooking. This will make the okra freeze solid.
  1. Add okra immediately to your dish after taking it out from the refrigerator. You can use it as a whole or chopped.
  1. Always trim the ends before adding it to your dish.
  1. Don’t allow it to thaw to avoid it from sliming out.



Tips For Cooking

  1. To avoid too much sliming, fry it in oil a little before adding all spices. This reduces the slime to a great extent. Remove okra from the pan and set aside and add it towards the end after you have prepared the rest of the dish.
  1. Soak it in vinegar or lemon water before using it. Another option is to add lemon or vinegar to the dish itself to cut down the slime.

Bhindi masala gravy | Vendakai masala for chapati
Instructions
  1. Add 2 chopped onion, 1 inch ginger and 3-4 garlic cloves in a mixie jar.
  2. Grind to a smooth paste
  3. Add 5 chopped tomatoes in a mixie jar
  4. Grind to smooth paste
  5. Clean and cut lady's finger into 1 inch piece.
  6. In a pan add 1 tsp oil
  7. Add cut bhindi/ lady's finger
  8. Fry in low flame till its cooked. Transfer to a plate.
  9. In a pan add 2 tbsp oil
  10. Add 1 tsp mustard seeds and 1 tsp cumin seeds
  11. Add ground onion paste and sauté well
  12. Add 1 tsp omam or ajwain
  13. Add 3/4 tsp cumin powder
  14. Add 1/2 tsp turmeric powder
  15. Saute well till oil separates
  16. Add ground tomato paste.
  17. Add 1 tbsp chilly powder
  18. Add 1 tsp coriander powder
  19. Add 1 tsp salt
  20. Add 1 tsp fresh curd
  21. Add 1/2 glass water and boil well till raw smell goes off
  22. Add pepper powder if needed
  23. Add cooked bhindi / lady's finger
  24. Boil for 2 mins and switch off. As the bhindi is already cooked.
  25. Serve with hot rice or roti
