Beetroot Medu Vada

Beetroot Medu Vada tried out the first time came out very well. Just decided the previous night and processed in the morning. If your children is not eating any kind of vegetables like carrot ,beetroot and beans etc try this way around surely you will succeed. It was crispier and the taste was like medu vada with a light flavor of beetroot. My hubby enjoyed having this medu vada and my MIL was surprised to see the colorful version of medu vada.

Instructions
  1. Soak 2 cups of urad dal over night in water.
  2. Grate beetroot and keep aside.
  3. Grind urad dal in mixie do not add much water. As we are going to add beetroot it leaves some water. Add ground vada mixture to a vessel.
  4. Add chopped onion.
  5. Add curry leaves and cut red chillies.
  6. Add fresh coriander leaves.
  7. Add grated beetroot.
  8. Beetroot leaves some water so bind well with the mixture.
  9. Add 1 tsp salt or as required.
  10. Mix well and keep aside for 5 mins do not keep more than that.
  11. Start deep frying vada. Do not keep this left over mixture in fridge as it leaves more water and spoil the vada texture while putting it in oil.
  12. In a pan add oil and deep fry the vada.
  13. Turn the other side and cook in low flame.
  14. Beetroot medu vada is ready to serve.

  15. See the colourful medu vada. Children loves it very much. If your child is not having vegetables you can try it this way. You may succeed in it.

  16. You can also serve it with chutney of your choice. Coconut chutney suits the best.
